Ludico
From the homonymous native vine of Arquata del Tronto, the full and fruity taste of this pure Pecorino DOC begins. An early wine, which matures at the end of August and therefore also lends itself well to ageing. Legend has it that the name Pecorino is attributable to the phenomenon of sheep that entered the local vineyards to eat the berries of the renowned product, but this version seems to be devoid of historical foundations.
Organoleptic properties: bright straw-yellow colour with greenish reflections; fruity on the nose with pre-eminence of ripe fruit such as peach, appie and exotic fruits; good acidity and the alcohol content gives a full and persistent taste.
Grapes used: Pecorino.
Production soil: medium-textured with areas very rich in clay.
Processing: manual harvesting brought slightly forward to preserve its natural acidity, de-stemming and cryomaceration of the grapes, separation of the must and its cold decantation, long fermentation at low temperature with selected yeasts.
Ageing: allowed to rest on fine lees for 2 months.
Accostamenti gastronomici: adatto ad antipasti, primi e secondi a base di pesce, inoltre la sua struttura consente abbinamenti anche con arrosti di carne, fritto misto di carne e le caratteristiche Olive all’Ascolana.
