Marche Rosso IGT/PGI
Organoleptic properties: with a garnet red colour typical of mature red wines; very intense on the nose, ample, with toasted notes linked to ageing in wood; soft in the mouth, quite tannic, very robust and balanced.
Grapes used: 100% Montepulciano
Production soil: medium-textured tending to calcareous.
Processing: the slightly overripe grapes are harvested manually and vinified in small containers where the marc, without the stalk, remains in maceration for about 30 days. This is followed by racking and the second natural malolactic fermentation. Once clarified, the wine matures inside large oak barrels. Once the right balance has been achieved, bottling and packaging follow.
Ageing: the ageing period in large oak barrels is at the enologist’s discretion. Before marketing, the wine rests for about three months in the bottle.
Gastronomic matches: should be consumed with roasts, grilled meats, cured meats and mature cheeses; excellent pairing with Marche ‘tagliata’;
