Organoleptic properties: straw-yellow colour with golden reflections; on the nose reveals aromas typical of tropical fruit and white flowers; in the mouth sapid and well structured, with a persistent note of freshness;
Grapes used: Pure Passerina;
Production soil: clay and limestone;
Processing: manual harvesting of grapes with a good balance between acidity and sugars, cooling and soft pressing of whole grapes, cold must cleaning followed by long fermentation at low temperatures through the use of selected yeasts;
Ageing: in temperature-controlled steel vats;
Gastronomic matches: blends beautifully with fish-based first courses, with fried fish and pan-fried fish; also adapts well to white meat-based light roasts;
