Organoleptic properties: light straw-yellow colour with greenish reflections; fine and very fruity on the nose; in the mouth expresses freshness and sapidity balanced by the right softness;
Grapes used: Trebbiano Toscano, Passerina, Pecorino;
Production soil: medium-textured, predominantly clay;
Processing: harvesting of fully ripe grapes, subsequent soft pressing of whole grapes, cold must cleaning and low temperature fermentation with selected yeasts;
Ageing: in temperature-controlled steel vats;
Gastronomic matches: lends itself well as an aperitif but expresses the maximum when eaten with appetisers and fish-based first courses;
ABV: 12,50% Vol.
